You’re going to want to try these whether it’s for St. Paddy’s Day or not. I’ve been making these for the past month or so to get me going in the morning, and occasionally adding in an iced version in the afternoon. Not only do they taste great, but the peppermint keeps your breath nice and fresh.
Since there are dates in the recipe, a high powered blender works best to pulverize those babies. If you don’t have a high powered blender you can always add in a liquid sweetener like stevia or leave it unsweetened.
Note: recipe serves two, but it is easy to half for one serving size.
Ingredients
Iced version:
- 1 1/2 cup almond milk (I use The New Barn Unsweetened)
- 1 tablespoon Matcha Powder
- 1 tablespoon grassfed Collagen
- 3-4 drops peppermint essential oil
- 1/2 teaspoon almond extract (omit for Whole30)
- 2 dates, optional (or other sweetener of choice)
- 1 1/2 cup crushed ice (a little more if cubed)
Hot version:
- 2 cups almond milk (I use The New Barn Unsweetened)
- 1 tablespoon Matcha Green Tea Powder
- 1 tablespoon grassfed Gelatin
- 3-4 drops peppermint essential oil
- 1/4 teaspoon almond extract (omit for Whole30)
- 2 dates, optional (or other sweetener of choice)
Instructions
For the Iced Version:
- Add almond milk, matcha powder, collagen, almond extract, dates, then add in the ice last.
- Starting on a low speed, blend for 15 seconds. Increase to a medium speed, and blend for another 10 seconds, then increase to high speed until running the blender runs smooth (about 10 seconds).
- Note: you may need to use the plunger or add in a little more liquid to get the right consistency.
- Pour into glasses and enjoy!
For the hot version:
- Place all the ingredients in Vitamix (or other high powered blender), blend starting on a low speed for about 10 seconds, then increase to a medium speed for about 10 seconds, finally high speed for about 15 seconds (if dates were added you may need longer to make sure the dates are completely pulverized).
- Once there are no remnants of dates, 0our all the ingredients in a small sauce pan to heat until boiling (or microwave until hot).
- Enjoy!
